Resolutions

I hope that everyone had an amazing holiday season! I couldn't have asked for more. Nothing beats quality time with family and friends. The time off work is a plus too! :) I took the entire week off between Christmas and New Years. It was wonderful!

 The last couple of pictures were at Olive Garden on my birthday. I can't believe I am 26! I got a little lightheaded the first time I realized that I was closer to 30 than 20.

Now, on to my New Year's resolutions! To be honest I didn't make these resolutions on New Year's Eve. I have taken the last week or so to really think about the things that I would like to change this year.

1.) Blog more. I am a private person in general so sometimes I feel a little strange about blogging. However, I am going to do my best to update it more regularly.

2.) Worry less about what the scale says.  I would like my focus to shift from the scale to overall health. I workout and eat healthy food because it makes me feel good and will help me live longer.

3.) Be less judgemental.

4.) Learn new things & get out of my comfort zone. I am starting this off by taking a wine tasting class through Santa Fe Community Ed!

5.) Find a church in Gainesville. Heath and I have been church 'shopping' for a while now and we haven't found the perfect one. Right now we go to a church that has a great pastor with messages that really make you think, but we don't like the music. It is so bad that we want to show up for church 15 minutes late every week just to avoid the 'concert.' It is SUPER loud and impossible to sing along to. It is really like a 15 minute concert where the only people who know the lyrics are the college kids on stage in skinny jeans and flannel t-shirts. Not that I am judging (see #3.) Just an observation.

Thanksgiving Eve

Good Morning!

Sorry that I have been MIA lately. My family has been going through some really hard stuff. My Sister-in-law & Brother-in-law lost their 19 month old son in a terrible accident. It has been really hard on everyone. Baby Mario was such an amazing spirit. He brought laughter and joy everywhere he went. Since tomorrow is Thanksgiving I would like to say that I am SO incredibly thankful for the time that I got to spend with him.


Speaking of Thanksgiving, I am also thankful for my wonderful family and amazing boyfriend. I am thankful for my Mom, if it wasn't for her I wouldn't be where I am today. I am thankful for my great friends that helped me get through the last couple of weeks. I am thankful that I have a safe home, a good job, plenty of clothes and food. Finally, I am thankful that God is always with me when I need him.

I hope you have a great Thanksgiving. I can't wait to spend some time with my family and eat some good food! Also, I am getting ready for Black Friday! My Mom and I go shopping every year. Oh, and you would NEVER guess the first store we go to. It isn't Best Buy, Wal-Mart, Target, or the mall. I'll give you a hint... it has do with with my Mom's favorite hobby. Can you guess?

The Pumpkin Obsession Continues

Tuesday night I made the most amazing Curried Pumpkin Dahl I have ever had. To be honest, I had never tried curried pumpkin but it was pretty dang delicious.



I was a little nervous because although I loved pumpkin in sweet recipes I had never tried it in something savory or spicy. My expectations were blown away. It was a lot of work because I actually had to peel and chop a small pie pumpkin, but it was totally worth it!

Curried Pumpkin Dahl
1/2 of a large sweet onion, sliced 
1/4 cup grated coconut
3 cloves garlic, sliced (I used 4 because I <3 garlic!)
2 Serrano or Thai chili peppers, .seeded and diced (I used 3 Serrano peppers NOT seeded.)
1 tablespoon fresh ginger root
2 teaspoons garam masala
1 teaspoon ground cumin
1/2 teaspoon cinnamon
1 teaspoon salt
1/4 teaspoon turmeric
1/4 teaspoon ground coriander
2 cups chicken or vegetable stock (I used 1 cup of each)
1 tablespoon olive oil
2 cups tomatoes, diced
4 cups fresh pumpkin (1 small pie pumpkin), peeled and diced
2 cups cooked black-eyed peas
2 cups kale or spinach, chopped
3 tablespoons mint, minced

1. Combine onion, coconut, garlic, chili peppers, ginger root, garam masala, cumin, cinnamon, salt, turmeric, coriander and 4 tablespoons stock in a blender. Puree mixture to a paste.

2. Heat oil in a large saucepan, then add the spice paste and cook, stirring often, for 10 minutes. Add remaining stock, tomatoes and pumpkin. Cook over medium heat, stirring often, until squash is just tender, about 20 minutes.

3. Mix in black-eyed peas and kale. Continue to cook, stirring often, until kale is tender, about 10 more minutes. Remove from heat. Taste and adjust seasonings; stir in the mint just before serving.

I served it over brown rice and will be making it again VERY soon!

Wednesday night I made grilled lemon-pepper Mahi-Mahi with organic couscous and veggies:


Step for the veggies
1.) Melt 2 TBSP organic butter in a pan over medium-high heat
2.) Add 4 cloves minced / chopped garlic and let cook for approximately 1 minute
3.) Add 1lb baby carrots and a couple hand fulls of frozen broccoli and let the mixture saute for about 5 minutes
4.) Add 1/2 cup water, black pepper, onion power, and salt
5.) Cover, and let simmer for about 20 minutes
6.) Add extra seasonings to taste

These were the best carrots I have ever had. No joke.

Steps for the Mahi-Mahi:
1.) Mix together a few tablespoons water and 3 drops liquid smoke and brush the mixture over the fish
2.) Melt 1 TBSP butter or olive oil and brush over the fish
3.) Sprinkle very generous amounts of garlic powder, onion powder, and lemon-pepper seasoning
4.) Cover with aluminum foil and grill for 5 minutes per side
5.) Remove the fish from the foil and grill for approximately 1 more minute per side
6.) Serve on top of whole grain couscous and squeeze a lemon on top (optional)

For the couscous I followed the package directions, and at the end added a little bit of Parmesan cheese.

Yesterday at a work event I won tickets to the Gator game on Saturday. I am really excited! I know that a lot of 'fans' aren't going to this game because we aren't having a great season. However, I would be there cheering on my boys in blue even if we hadn't won a game all season. "In all types of weather we'll all stick together for F-L-O-R-I-D-A!"

Happy Halloween!

My Halloween celebrations started two weeks ago. Heath really enjoys carving pumpkins (and he is REALLY good at it) so we thought we would have a dry run at carving. My pumpkin took a few hours and I wasn't really impressed with the results... but I'll show you anyway ;)

Heath took this picture to work and his pumpkin was such a hit with his boss that she asked him to carve pumpkins for her. Heath was in charge of a Little Mermaid pumpkin and I was asked to do a Ghostface (Scream) pumpkin. His boss has three girls and guess who their favorite Disney character is?



By the time Halloween finally arrived Heath wasn't interested in doing a really hard pumpkin... so I found a couple of easier ones for us to do. Technically it was only easier for him, mine was harder!


Victor (carved by Heath) and The Corpse Bride (carved by me!) We got a lot of compliments on these two from people trick-or-treating.

Speaking of trick-or-treating, I spent the beginning of the night at The Village. We decided to have a festival / trick-or-treat for our employees families. We have a lot of employees that couldn't necessarily take the kids out in their own neighborhood, so it was nice to provide a safe environment with lots of toys and candy! I invited my niece, Shelly, and her three kids


I headed home about 8:00 and helped Health hand out the rest of our candy. We actually ran out about 9:00 and had to turn some kids away. Can you believe kids came by until after 10:00pm?! It was a school night! I was blown away.

Will Run For Food

I have big news! I have officially set a date for my first 1/2 marathon. I will be running the 5 Points of Life 1/2 Marathon on Sunday, February 19th. I took a few weeks off running due to an ankle injury but now I am ready to go again! I am VERY nervous. My trainer told me that I needed to go ahead and register because the price would go up after November 15th. Once I have signed up it is official. For a few days I struggled with that because I wanted to train at my own pace. I've had a lot of negative thoughts run through my mind. What if I can't do it? What if I get hurt again? What if I'm not ready? Today I am putting those negative thoughts out of my head. Worst case scenario I will have to walk some of it. No big deal, right? My goal is to run the whole thing but even if I am not ready by then I can at least finish it. I KNOW I can do that.

I don't particularly like running. I told Heath yesterday that my main motivation for running a marathon is that I can eat whatever I want to afterwards and not feel guilty. ;)




All joking aside, I would just like to be able to say that I have ran a 1/2 and a full marathon. Wish me luck!

Today is my Friday! I was Manager on Duty last weekend so I have worked 11 days in a row. I am totally drained so I can't wait to relax. Heath and I are going to be carving pumpkins so I'll be sure to post pictures on Monday. Have a great weekend!

Loving Fall

Wow! I can't believe it has been over a month since my last blog post. Honestly, every now and then I get kind of weirded out by posting so much personal information online. I think I am over that for now... we'll see. :)

Fall is my absolute favorite season. I love the weather, the food, and the anticipation from the upcoming holidays. I wish I could live permanently in the time between Thanksgiving and Christmas. (Which I know isn't technically 'Fall' but I still consider it to be Fall because we live in Florida.)



I am currently obsessed with anything and everything pumpkin. I have made pumpkin cookies, pumpkin oatmeal, pumpkin bread and I have even made pumpkin soup. I found a recipe for pumpkin enchiladas the other day and I plan on trying that too. :)

I usually don't recommend anything out of a box but if you are in a pinch and need (or want) something VERY quick and incredibly easy here is a great recipe:




That's it! Just mix one box of Spice Cake mix with one can of pumpkin. The mixture is VERY thick so you can either make little drop cookies or cupcakes. I made small cookies. Oh, and the raw mix tastes fantastic. :) The original recipe says to top the cookies with cream cheese icing and cinnamon, which I didn't do. I don't think the extra sweetness is really necessary. These are just slightly sweet and kind of airy like a cake.

The pumpkin bread that I made was a HUGE hit with Heath and his co-workers.
 

1 ½ cups organic whole-wheat flour
1 ½ teaspoons cinnamon
1 teaspoon ground ginger (The first batch I made with ginger and the second I left it out. Personally I think it is better without.)
½ teaspoon nutmeg
1/8 teaspoon cloves
1 teaspoon baking soda
¼ teaspoon baking powder
½ teaspoon salt
2 eggs
½ cup oil (I used organic coconut oil)
½ cup honey
½ teaspoon vanilla
1 cup pumpkin puree (I used about 1.5 cups. Can you ever have too much pumpkin? )
1/2 cup chopped tree nuts (optional)

Preheat oven to 350 degrees.
In a large mixing bowl whisk together the dry ingredients (from the flour down to the salt).
Make a well (hole) in the center and throw in the eggs, oil, honey, and vanilla. Stir together thoroughly with a fork, but do not over mix.
Fold in the pumpkin puree and nuts (if using).
Generously grease a large loaf pan or put muffin liners in a muffin pan and then pour in the batter.
For a loaf bake for approximately 30 – 40 minutes and for muffins bake for approximately 18 – 22 minutes. Check for doneness by making sure a toothpick inserted comes out clean.

I poured these into cupcake tins and sprinkled a little extra cinnamon on top. This bread is not only 'clean' but very healthy! One serving has only 150 calories. Also, mine were organic because I used farm fresh eggs, organic flour, organic pumpkin, etc. For some reason I noticed that the texture  was slightly better on the 2nd day. I tried one while they were warm and I was slightly disappointed. The next day they were amazing!

Busy Bee

Hello!

As my title suggests I have been one busy bee the last couple of weeks. (Hence the lack of blog updates.) First there was Katie's wedding, family visiting, lots of work, and the birth of a new family member.

I'll start with Katie's wedding. Katie got married on September 3rd at Camp Weed. I was the Maid of Honor. I had an amazing time and was so honored to be a part of this event. The weeks leading up to the wedding were busy and stressful, especially for Katie and her family.   I know Katie is really glad that it is over. I don't have any pictures of me yet... but here are a couple that the photographer, Jaime Swanson, posted on facebook of Katie and Kyle.






With a couple minor exceptions (a late DJ and a moody preacher) everything was a huge success! Congratulations Mr. and Mrs. Wheeler! I wish you many years of happiness together!

Side Note: I recommended Katie's cake designer because I have used her many times in the past. If you want a cake that is not only beautiful, but also tastes AMAZING, you should call Maria.

As I said in my first paragraph, work as been really busy lately. When I started here there were five people in my department. Now there are three. My responsibilities have doubled, but it's okay because to be quite honest I enjoy my added responsibilities more than I enjoyed my previous ones. I am lucky to have two great co-workers, one of which includes a great boss. It might not be what I want to do forever but for now I guess I am pretty lucky to be where I am.

In other exciting news, my niece had her third baby last week making me a great-aunt once again! Welcome to the World Harleigh Renee Koonz!
